New bars in Hong Kong – January 2025
Not 2 Sweet

Not 2 Sweet is the latest entrant on Peel Street’s bar circuit. Its name pokes a tongue-in-cheek fun at its own guests — when patrons respond with vague answers like “something not too sweet” or “something strong” to bartenders asking their cocktail preference. Mixologist Richard Fernie and his co-founder Leandro Chan are the cheeky duo behind this new concept. The two first forged a partnership at Behind 69 and now reopened this eclectic and grungy bar. Its menu boasts rotating seasonal selections and a more standard “crowd favourites” list with classic twists. The team also encourages guests to ask for “off the menu” items — in a “you name it, we make it” kind of way.
