6 Dishes Singaporean Roti Prata

THE CLASSIC PLAIN ROTI PRATA—kneaded, flipped and cooked to crispy-chewy perfection—is already sublime with a simple curry dip, but leave it to food-crazy Singapore to get extra-creative with its favourite flatbread. There are too many versions to sample in one lifetime, so here are six must-trys. T+L tip: I haven’t included the Milo butter prata, but almost any reputable mamak food stall can whip up this off-menu treat by request.

COIN PRATA

Singaporean Roti Prata - Coin Prata

This rendition is one step up from prata kosong (plain), but, oh, what a step it is. Paper-thin dough is folded into a coil and then fried until golden brown and mouthwateringly crispy. The coin prata can be eaten with the usual curry dip or with condensed milk and sugar for a super-sweet treat. It’s a standard menu offering at most prata shops—though the ones at Mr and Mrs Mohgan’s Super Crispy Roti Prata are always at the top of Singapore’s food blogger lists.

DAS PRATWURST PRATA 

DAS PRATWURST PRATA

The German currywurst returns to its Asian roots, thanks to this delectable prata concoction from Springleaf Prata Place. Das Pratwurst is an oversized folded prata stuffed with homemade chicken sausage, sauteed onions and mozzarella cheese. The whole assemblage is covered in curry powder, and the restaurant’s own curry-ketchup recipe. A side of sauerkraut doubly channels Berlin.

ICE CREAM PRATA

Singaporean Roti Prata - Ice Cream

Hard to beat this take on a classic mamak resto menu item. Prata Alley’s ice cream prata packs not one but three scoops of ice cream (strawberry, vanilla and chocolate) on a crispy sheet of roti prata. This is then drizzled with two sweet syrups and showered with candy sprinkles and chocolate chips. Two fingers of Kit-Kat (because everyone loves Kit-Kat) complete this beautifully overdone palate pleaser.

THE PRACLETTE

The humble prata-and-cheese combo gets the Swiss treatment with the addition of mushrooms, sauteed onions, black olives and turkey ham over a piece of fluffy, flaky roti prata, and the name comes from the thick layer of melted raclette cheese that’s slathered on top. It’s an irresistible new addition to Springleaf Prata Place’s offering of newfangled fusion roti prata dishes.

ONDEH-ONDEH PRATA

ONDEH-ONDEH PRATA

This is a true Singaporean original, paying homage to the traditional flour-based ondeh-ondeh snack. A cup made from feathery tissue prata (an even thinner version of the OG) holds a huge scoop of coconut ice cream, plus pandan-flavored jelly, gula melaka cane sugar syrup, and a sprinkling of shredded coconut. Casuarina Curry’s MacPherson branch is the only place in Singapore that serves it.

THE BIG ONE

Pizza

Prata-based pizza is hot right now, and nobody does it better than Prata Alley—their take on the Italian staple is a playful mix of olives, peppers and mozzarella cheese topped with chunks of masala-laced chicken tikka, salami and mint leaves. These are all beautifully held together by a huge sheet of doughy, slightly chewy roti prata. Yes, it is big enough to feed two.
